Position Summary
The Prep Cook plays a critical role in supporting the kitchen team by preparing ingredients, maintaining organization, and ensuring the kitchen runs efficiently. This position is ideal for individuals who are detail-oriented, disciplined, and eager to grow within a fine-dining environment. Prep Cooks at Suzu will work with high-quality, seasonal, and Japanese specialty ingredients.
Key Responsibilities
Food Preparation & Production
- Execute daily prep tasks including cleaning, cutting, portioning, and marinating ingredients
- Follow detailed recipes and preparation standards
- Assist with preparing stocks, sauces, garnishes, and base components
- Maintain accurate labeling, dating, and storage of all prepped items
Kitchen Support & Organization
- Ensure all stations have sufficient mise en place before service
- Maintain a clean, organized, and efficient prep area
- Assist line cooks, Chef de Partie, and Sous Chef with various tasks as needed
- Support team with restocking and rotating inventory
Quality & Consistency
- Handle premium ingredients with care and precision
- Ensure consistency in cuts, measurements, textures, and prep quality
- Report any product issues, shortages, or quality concerns to kitchen leadership
Food Safety & Cleanliness
- Follow all HACCP guidelines, sanitation standards, and food safety best practices
- Maintain clean cutting boards, prep tools, and equipment
- Support daily and weekly cleaning tasks to uphold fine-dining kitchen standards
Qualifications
- 0–2 years of kitchen experience
- Strong knife skills and a willingness to learn advanced techniques
- Food Handler Certificate
- Ability to follow instructions, recipes, and prep lists accurately
- Excellent time-management skills and a sense of urgency
- Respect for cleanliness, organization, and professional kitchen discipline
- Interest in Japanese cuisine, techniques, and ingredients (training provided)
