Position Summary
The Pastry Cook prepares and plates SUZU's dessert and pastry program — Japanese-inspired desserts, mochi, seasonal confections, and accompaniments — under the direction of the culinary leadership. This role is responsible for the precision, consistency, and artistry of the sweet side of the menu. The ideal candidate is detail-oriented, creative, disciplined with recipes, and passionate about pastry and Japanese flavors.
Compensation
$15.00–$22.00 per hour, based on experience.
Key Responsibilities
Pastry & Dessert Production
- Prepare desserts, pastries, mochi, and confections to recipe and chef specifications
- Execute consistent, high-quality production for à la carte, omakase, and seasonal menus
- Assist with recipe development and seasonal dessert offerings as directed
Plating & Presentation
- Plate desserts with precision, balance, and beauty to fine-dining standards
- Ensure consistency, accuracy, and presentation across every plate
- Maintain the visual identity and quality of the dessert program
Mise en Place & Station Management
- Set up, stock, and break down the pastry station efficiently
- Label, date, rotate, and store product to preserve quality and ensure FIFO
- Monitor par levels and communicate prep and ordering needs to leadership
Recipe Execution & Consistency
- Follow recipes, ratios, and techniques precisely for repeatable results
- Measure, scale, and time production accurately
- Uphold portioning, plating, and quality standards on every item
Sanitation & Food Safety
- Follow all sanitation, hygiene, and food-safety protocols rigorously
- Maintain immaculate cleanliness of the station, tools, and equipment
- Adhere to all Ohio food-safety regulations and SUZU standards
Qualifications
- 1–3 years of pastry or baking experience (restaurant or fine dining preferred)
- Strong fundamentals in pastry techniques, ratios, and plating
- Attention to detail, consistency, and creativity
- ServSafe / food-handler certification (or ability to obtain)
- Ability to perform under pressure in a fast-paced kitchen
- Interest in Japanese flavors, ingredients, and dessert traditions
